Chopped Salad with White Beans


4 teaspoons red wine vinegar                       

1/4 teaspoon sea salt                                      

1/8 teaspoon black pepper     

3 tablespoons extra-virgin olive oil   



2 cups chopped romaine lettuce

2 cups finely chopped radicchio

One 15-oz. can white beans, rinsed, drained, and patted dry
8 oil-packed sun-dried tomato halves, drained and chopped


In a large bowl, whisk the vinegar, salt, and pepper until blended. Gradually whisk in the oil until incorporated.

Add the lettuce, radicchio, beans, and sun-dried tomatoes. Toss to coat. Add more sea salt and pepper if needed.
